Upon cupping, this particular coffee—roasted just past the second crack, commonly known as the "city roast"—was strikingly crisp and sophisticated. This superb quality is undoubtedly a testament to the farm's rigorous presorting and selective picking, ensuring only the best beans cut.
This coffee's origins can be traced back to a Rainforest Alliance-certified farm nestled 1,200-1,500 metres above sea level. The extraordinarily fertile volcanic soil provides the ultimate terrain for growing premium arabica beans.
On tasting, anticipate delightful notes of sweet plums complemented by stone fruit acidity. Warm spices elegantly round off the palate. As an espresso, it presents a creamy yet harmoniously balanced profile, rich with nutty caramel undertones. It's the perfect cup for those with an appreciation for a pure, flavour-rich coffee experience.
This bean is genuinely a stellar discovery. Moreover, only a select few roasters across Europe have the privilege of importing this unique bean. The Rainforest Alliance certification attests to its ethically sourced and sustainably farmed origins, making it the bean of choice for establishments that prioritise quality and ethics in equal measure.
Once cupped, this coffee we roast to just after a second crack or "city roast" as it often referred to, turned out to be astonishingly clean and elegant. No doubt a result of a high degree of presorting and pickings to remove the un-ripes and defects at the farm.
The source is a rainforest alliance certified farm situated some 1200-1500 meters above sea level with highly fertile volcanic soil - optimal growing conditions for superior quality arabica coffee!
When tasted, expect notes of sweet plums and stone fruit acidity with warm spices to round up the cup. This espresso is also creamy yet balanced and exhibits plenty of nutty caramel tones to the coffee. This is one perfect cup for those who just want to enjoy a nice clean but flavoursome coffee...

Convection roasting or air roasting is exactly how it sounds, smooth streams of hot air gently pass over the coffee beans until perfectly roasted. This creates a smooth and equally as important, an even roast, without any scorching or over-roasting usually associated with traditional drum roasters.
